4ea Schulstad Large Butter Croissant
8 slices Canadian Bacon
8ea Farm Fresh Eggs
240g Hollandaise Sauce
Arugula Salad (optional)

Preparation

Preheat the waffle iron. Meanwhile, allow pastry to thaw for 20 minutes. Place into the center of the iron. It will take 5-7 minutes to cook fully. Meanwhile, grill the Canadian bacon and prepare the eggs your preferred way.
Once croffle is cooked, remove from waffle iron and let cool. Cut the croffle in half for the base. Top each half with Canadian bacon and eggs. Spoon the hollandaise sauce on top. Finish with parsley.
Serve with an arugula salad on the side (optional).
